My Favorite High Protein Bagel Recipe

**I pair this with avocado or cream cheese; it tastes so good!

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup oat flour
  • 1 cup whey protein powder (unflavored or vanilla)
  • 2 ¼ teaspoons active dry yeast
  • 1 ½ teaspoons salt
  • 1 tablespoon sugar
  • 1 cup warm water (110°F / 45°C)
  • 2 tablespoons plain Greek yogurt
  • 2 large eggs (one for dough, one for egg wash)
  • 2 tablespoons honey (optional, for boiling)

Instructions:

  1. Activate Yeast: In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Prepare Dough: In a large mixing bowl, combine whole wheat flour, oat flour, whey protein powder, and salt. Make a well in the center and add the activated yeast mixture, Greek yogurt, and one egg. Mix until a dough forms.
  3. Knead Dough: Transfer the dough to a floured surface and knead for about 10 minutes until it’s smooth and elastic. If the dough is too sticky, add more flour, a little at a time.

  1. First Rise: Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.
  2. Shape Bagels: Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center with your finger and stretch it to form a bagel shape.
  3. Second Rise: Place the shaped bagels on a parchment-lined baking sheet, cover with a damp cloth, and let them rest for 15-20 minutes.

  1. Boil Bagels: Preheat your oven to 425°F (220°C). In a large pot, bring water to a boil. Add honey if using. Gently drop bagels into the boiling water (2-3 at a time) and boil for 1 minute on each side. Remove with a slotted spoon and place back on the baking sheet.
  2. Bake Bagels: Brush the tops of the boiled bagels with the beaten egg for a glossy finish. Bake in the preheated oven for 20-25 minutes or until golden brown.
  3. Cool & Enjoy: Let the bagels cool on a wire rack. Enjoy them fresh with your favorite high-protein toppings like smoked salmon, avocado, or nut butter!
