Ingredients:
- 1 premade pie crust (Aldi’s Simply Organic brand)
- 1 cup fresh spinach (Aldi’s Simply Organic brand)
- 1 cup sliced mushrooms (Aldi’s Simply Organic brand)
- 1 small onion, diced
- 4 large eggs
- 1 cup milk
- 1 cup shredded cheese (Aldi’s Specially Selected brand)
- Salt and pepper to taste
- 1 tablespoon olive oil

Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent.
- Add the sliced mushrooms and cook until they are soft and browned.
- Add the fresh spinach and cook until wilted. Season with salt and pepper to taste.
- In a mixing bowl, whisk together the eggs and milk. Stir in the shredded cheese.
- Spread the cooked spinach and mushroom mixture evenly over the premade pie crust.
- Pour the egg and cheese mixture over the spinach and mushrooms.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and the top is golden brown.
- Let the quiche cool for a few minutes before slicing and serving.
